  • 1 lb ground beef I prefer 80/20
  • 1 large yellow onion, finely chopped
  • 1 jalapeno pepper, de-seeded and chopped
  • 1 poblano pepper, de-seeded and chopped
  • 1/2 Cup low-sodium beef broth
  • 2 tablespoons cornstarch
  • 2 cans diced tomatoes with green chiles, drained slightly
  • 3 tablespoons homemade taco seasoning
  • 1 to 2 cups shredded Mexican cheese blend
Garnishes:
  • Sliced black olives
  • Fresh cilantro, minced
  • Chopped fresh tomatoes
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon lime juice
