After many trials and a fair share of burnt edges, I think I've finally nailed what I call the ultimate gourmet grilled cheese.

Ingredients
  

  • 2 medium yellow onions, finely chopped
  • 3 Tbsp unsalted butter, divided
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • 12 oz Gruyère cheese, thinly sliced or grated, at room temperature
  • Mayonnaise, for spreading
  • 6 oz sharp white cheddar cheese, thinly sliced or grated, at room temperature
  • 1 Tbsp extra virgin olive oil
  • tsp fresh rosemary, minced, plus ½ tsp fresh rosemary for garnish
  • 8 pieces of high-quality sandwich bread
  • Sea salt and freshly ground black pepper,
  • 4 thin slices of Muenster cheese, at room temperature
  • 1 tsp fresh thyme leaves, minced
  • 1 tsp light brown sugar

Method
 

Step 1: Prepare the Onions
  1. In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the finely chopped onions along with a sprinkle of sea salt. Cook until the onions reach soft, caramelized perfection, about 10-15 minutes. This is crucial—taking the time here creates a flavor bomb for your sandwich.
Step 2: Make the Spread
  1. While the onions are cooking, combine mayonnaise, minced garlic, Dijon mustard, and a pinch of black pepper in a small bowl.
  2. This spread will serve as the secret weapon for flavor and to help in achieving a crispy crust. Set it aside.
Step 3: Assemble the Sandwich
  1. Lay out your slices of bread. Spread a generous layer of your unique mixture on one side of each slice.

Step 5: Flip and Finish
