Ingredients

  • 4 cups chicken broth or stock
  • 2 tablespoons freshly chopped parsley
  • 4-5 garlic cloves, minced
  • 2 cups whole milk
  • lbs. russet potatoes, peeled and cut into ½-inch cubes
  • 1 teaspoon smoked paprika
  • 2 tablespoons cornstarch
  • 1 large yellow onion
  • 1 teaspoon Dijon mustard
  • 20 oz canned corn,
  • 1 cup sour cream
  • 4 cups diced ham steak
  • 2 cups shredded sharp cheddar cheese
  • ½ teaspoon freshly ground black

Method

  1. Now let’s roll up our sleeves and get cooking! Here’s how to prepare your slow cooker cheesy ham chowder.
Step 1: Prepare the Ingredients
  1. Start by gathering and preparing all your ingredients. Dice the ham, chop the onion, peel and cube those potatoes, and mince the garlic. Having everything ready will make the cooking process smoother. Trust me, doing this step right can save you from scrambling later.
Step 2: Sauté the Vegetables
  1. Although you don't have to sauté in a slow cooker, I recommend doing it for depth of flavor. In a skillet over medium heat, add a splash of olive oil. Sauté the chopped onions and garlic until they’re fragrant and the onions turn translucent. This usually takes about 4-5 minutes.
Step 3: Layer the Ingredients in the Slow Cooker
  1. In your slow cooker, layer the sautéed onions and garlic. Next, add the cubed potatoes, corn, diced ham, and sprinkle with smoked paprika. Lastly, pour in the chicken broth and give it a gentle stir. Ensure everything’s well combined, but don’t get too vigorous. You want to keep those potatoes intact.
Step 4: Cook Low and Slow
  1. Set your slow cooker to low and forget about it for about 6-8 hours. This is where the magic happens. As the hours tick by, the flavors meld together beautifully.
Step 5: Thicken the Chowder
  1. About 30 minutes before serving, it’s time to thicken it up. In a small bowl, mix cornstarch with a few tablespoons of cold water to create a slurry. Stir this mixture into the chowder. You’ll notice it starts to thicken nicely.
Step 6: Add the Creaminess
  1. Now it’s time for the creamy aspects. Stir in the whole milk and sour cream, mixing them in carefully. You’ll see the texture change to that luscious, creamy finish.
Step 7: Cheesy Goodness
  1. Finally, fold in the shredded cheddar cheese. Let it melt for a few minutes, then taste it. This is when you can add a pinch more salt or pepper if it needs it.
Step 8: Garnish and Serve
  1. Serve your chowder hot and top with chopped parsley, freshly ground black pepper, and additional shredded cheese for that cheesy, appealing look. Don’t forget the crusty bread on the side!

Notes

  • Choose Quality Ham: Opt for a good-quality ham steak for the best flavor. Leftover holiday ham works like a charm!
  • Don’t Rush Cooking: Allow the chowder enough time to develop its flavors. The longer, the better.
  • Adjust Consistency: If the chowder becomes too thick, add a splash of broth. If it’s too thin, give it more time and let it cook uncovered for a while.
  • Customize Flavors: Feel free to experiment with spices like onion powder or a dash of cayenne for added heat.
Garnish Generously: Presentation matters! Add parsley, black pepper, and even a drizzle of olive oil for that finishing touch.
