CROCKPOT SHREDDED BEEF:
  • 4 lb beef chuck roast
  • 2 tablespoons Dijon mustard
  • 2/3 cup beef broth
  • 1 teaspoon liquid smoke optional
  • 3-4 tablespoons unsalted butter, cut into slices
  • 2-3 tablespoons of packed light brown sugar
  • 2 1/2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon soy sauce
BARBECUE SAUCE:
  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 1 teaspoon olive oil
  • - Salt and freshly cracked black pepper, to taste
  • 20-24 oz bottle of ketchup
  • 1/3-1/2 cup packed dark brown sugar
  • 1/4 cup apple cider vinegar
  • 2-3 tablespoons molasses
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon smoked chipotle powder

Method
 

Step 1: Prepare the Beef
  1. Start by prepping the beef chuck roast. Trim off excess fat, but keep some on for flavor. In a bowl, combine Dijon mustard, beef broth, and a splash of liquid smoke for a smoky touch. Rub this mixture all over the meat, ensuring it’s evenly coated.
Step 2: Season
  1. In a small bowl, mix smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and brown sugar. Season the roast liberally with this blend.
Step 3: Slow Cook
  1. Place the seasoned meat in your slow cooker. Add slices of butter on top, then cover and cook on low for about 8 hours or on high for 4 hours.
