Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 whole bulbs of garlic
  • 30 unsalted g butter
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon finely chopped fresh thyme
  • 1 cup cream
  • 2-3 tablespoons freshly squeezed lemon juice
  • Zest from one lemon
  • 50 Parmesan g cheese
  • 1 tablespoon toasted pine nuts
  • Additional lemon zest for garnish
  • A pinch of smoked paprika flakes

Method
 

Step 1: Roast the Garlic
  1. Start by preheating your oven to 400°F (200°C). Slice the tops off the garlic bulbs, exposing the cloves. Drizzle them with olive oil, wrap them in foil, and pop them in the oven. Roast for about 30-35 minutes until they’re golden brown and soft. The aroma will fill your kitchen. Trust me, this is the magic moment where the flavor begins to blossom.
Step 2: Cook the Pasta
