Ingredients
  

  • 2-3 boneless, skinless chicken breasts, cut into bite-sized cubes
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 1 medium yellow onion, finely minced
  • 3 cloves garlic, minced
  • 16 ounces dried short-cut pasta such as rigatoni
  • 24 ounces jar of your preferred marinara sauce
  • Water to fill the empty marinara sauce jar
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Sea salt and freshly ground black pepper, to taste
  • Extra dried Italian seasoning, optional
  • Fresh parsley and/or basil, chopped for garnish
  • 1 tablespoon red wine vinegar
  • ½ teaspoon crushed red pepper flakes

Method
 

Step 1: Prepare Your Ingredients
  1. First, get your chicken ready! Cut the boneless chicken breasts into bite-sized pieces. You want these small enough to cook quickly but big enough to provide satisfying bites in your pasta.
    Next, finely mince the onion and garlic. This will deepen the flavor and allow these ingredients to blend beautifully into the dish.
Step 2: Sauté the Chicken
  1. In a large pot, heat a drizzle of oil over medium-high heat. Add the chicken cubes to the pot. Season them with sea salt, black pepper, Italian seasoning, and garlic powder. Cook until the chicken is golden brown, stirring occasionally for about 7-10 minutes.
Step 3: Add Onions and Garlic

Step 5: Cook the Pasta

Step 6: Add Cheese and Season
