  • 1 tbsp Heavy Cream
  • 1 cup Dark or Light Brown Sugar, firmly packed
  • 4 oz Ghirardelli Semi-Sweet Chocolate Baking Bar, chopped
  • 1/2 cup Ghirardelli 60% Cacao Bittersweet Chocolate Chips
  • 3/4 cup + 2 tbsp All-Purpose Flour
  • 1/4 tsp Sea Salt
  • 1/4 tsp Baking Powder

Method
 

Step 1: Preheat Your Oven
  1. Start by preheating your oven to 350°F (175°C). Preparing the pan is essential for avoiding any stickiness later. Grease an 8x8 inch baking pan or line it with parchment paper for easy removal.
Step 2: Melt the Chocolate and Butter
  1. In a small saucepan over low heat, combine the cubed butter and chopped Ghirardelli chocolate. Stir until completely melted and smooth. Alternatively, you can use the microwave; just heat in 30-second intervals, stirring in between.
Step 3: Beat the Eggs
  1. In a mixing bowl, whisk the eggs until they become frothy. Add the brown sugar, pure vanilla extract, espresso powder, and heavy cream. Mix until combined. This step helps to incorporate air for a lighter texture.
Step 4: Combine the Mixtures
