  • 30 medium fresh button mushrooms about 1 1/2 pounds
  • 1/3 cup freshly grated Parmesan cheese
  • 1/4 cup roasted red bell pepper, drained and finely diced
  • 1 1/4 cup shredded smoked sharp cheddar cheese
  • 1 clove garlic, finely minced
  • 2 tablespoon finely grated yellow onion
  • 1 tablespoon chopped fresh parsley optional, but recommended for a fresh kick
  • Salt and freshly ground black pepper, to taste

Method
 

Step 1: Preheat Your Oven
  1. First things first, preheat your oven to 375°F (190°C). This ensures the mushrooms will bake evenly.
Step 2: Prepare the Mushrooms
  1. Grab those fresh button mushrooms. Carefully remove the stems and set them aside. You’ll want to create a little hollow space in each mushroom cap. Use a small spoon or a melon baller for this task. It’s like excavating tiny flavor vessels!
Step 3: Make the Filling
  1. In a mixing bowl, combine the softened cream cheese, shredded cheddar, grated Parmesan, finely diced roasted red pepper, minced garlic, grated onion, and parsley. Add salt and pepper to taste. Mix everything until it’s well combined. It should be a luscious, flavorful paste.
Step 4: Stuff the Mushrooms
  1. Now comes the fun part - stuffing the mushrooms! Using a small spoon, carefully fill each mushroom cap with your cheesy blend. Don’t skimp on the filling; it should be heaped on top!
