  • 1 cup sifted all-purpose flour
  • ½ teaspoon sea salt
  • ½ teaspoon espresso powder
  • ½ cup packed dark brown sugar
  • 1 cup fine cane sugar
  • 12 tablespoons high-quality unsalted butter, cut into chunks
  • ½ cup premium Dutch-processed cocoa powder
  • ½ cup rich dark chocolate chips
  • 2 large free-range eggs
  • 1 egg yolk
  • 1 teaspoons ½ pure vanilla extract
Cheesecake Swirl
  • 8 ounces creamy full-fat cream cheese, softened
  • ¼ cup superfine caster sugar
  • 1 large egg
  • ½ teaspoon pure vanilla bean paste
  • ¼ teaspoon lemon zest

Method
 

Step 1: Prepare Your Oven and Baking Dish
  1. Start by preheating your oven to 350°F (175°C). Grease a 9x9-inch baking dish or line it with parchment paper. This prevents sticking and makes cleanup a breeze.
Step 2: Make the Brownie Base
  1. In a medium bowl, whisk together the flour, sea salt, and espresso powder. Then, in a saucepan over low heat, melt the butter and both sugars, stirring constantly until combined and smooth. Remove it from heat and mix in the cocoa powder.
    Let it cool slightly before adding the eggs and vanilla extract. Stir until well combined, and then slowly incorporate the dry ingredients. Finally, fold in the dark chocolate chips.
Step 3: Prepare the Cheesecake Swirl
