Ingredients
  

For the Pork Chops
  • 4 boneless thick-cut pork chops approximately 1 1/2 inches thick
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp garlic powder for that extra savory depth
  • 1 1/2 Tbsp neutral oil like canola or vegetable
For the Brine
  • 3 Tbsp coarse kosher salt
  • 1 quart warm filtered water
  • 1 tsp whole black peppercorns optional, for subtle spiciness
  • 2 sprigs fresh rosemary optional but adds aromatic depth
For the Bourbon Glaze
  • 1/3 cup bourbon
  • 3– 4 Tbsp light brown sugar, tightly packed
  • 3 Tbsp low-sodium soy sauce
  • 2 Tbsp apple cider vinegar
  • 1 tsp fresh ginger root, grated
  • 4 cloves garlic, finely minced or grated
  • A small pinch of cayenne pepper adjust to your heat preference
  • 1 tsp Dijon mustard for tangy complexity
For the Slurry
  • 1 Tbsp cold water
  • 1/2 Tbsp cornstarch

Method
 

Step 1: Brine the Pork Chops
  1. Start by creating the brine. Mix the coarse kosher salt into the warm filtered water until it dissolves. Add in the peppercorns and rosemary for extra flavor. Submerge your pork chops in this brine and let them sit for about 30 minutes. This step is crucial; it keeps the meat juicy and adds flavor throughout.
Step 2: Prepare the Bourbon Glaze
  1. In a saucepan over medium heat, combine the bourbon, brown sugar, soy sauce, apple cider vinegar, grated ginger, minced garlic, cayenne pepper, and Dijon mustard. Stir until the sugar dissolves and bring the mixture to a gentle simmer. This should take about five minutes. Once simmering, reduce the heat and let it bubble gently for another five minutes to thicken slightly.
Step 3: Preheat the Oven
  1. While your glaze is bubbling away, preheat your oven to 375°F (190°C). This ensures that your pork chops will bake evenly and come out just perfect.
Step 4: Prepare the Pork Chops
